This is the moment a quick-thinking street cook jumps into a pot of cold water after a bungling motorbike rider knocks over her wok and spills boiling hot oil all over her legs.

CCTV footage from Ms Xu and her husband’s restaurant entrance shows her making fried dough snacks on the pavement when the accident happens in the city of Fuzhou in China’s eastern province of Jiangxi.

The bungling biker, surnamed Huang, crashes the front of the motorcycle into a table, which pushes Ms Xu’s wok off its gas cooker and onto the ground.

The scalding hot oil burns Ms Xu’s exposed legs, she instinctively turns and runs for the metal pot filled with water used to wash dishes.

As she winces in pain, she jumps in and sits down, causing the pot to tip backwards.

In the footage, Ms Xu is helped by witnesses including the biker, who works as a local cook, and who covers her legs in soya sauce in a bid to cool her skin down.

Restaurant staff said they used soy sauce and raw eggs to cover Ms Xu’s legs before paramedics arrived and took over. Soy sauce is often used as a home remedy to sooth burns.

Policeman Yu Jingheng said: “[The suspect] took part in the rescue, but he stayed for about 10 minutes.

“When the ambulance arrived, he left.”

Officer Yu said the suspect left his motorcycle at the scene, and the police discovered that it had been carrying fake plates.

The biker, surnamed Huang, who is in his early 20s, turned himself in nine days later.

Investigations are ongoing.
